Christmas baking extravaganza
It's still Christmas eve here in the U.S., and just mere minutes ago, I was covered in splotches of chocolate, flour, and sugar. I'm baking up a storm for tomorrow's festivities at Brandon's old abode, and my duty, as you may have guessed by now, is to bring the desserts. My menu is as follows:
- Brownie squares -- Made with a butter cookie crust, and brownie filling that's made with Dutch cocoa and bittersweet chocolate.
- Sweet potato pie -- Same as the one I made here, except this time I'll be adding the pecans and maple syrup. Oh, and I'm using whole wheat pie crust this time (it was the only kind I could find at Whole Foods). It'll be a healthy pie, sort of.
- Moo-less chocolate pie -- Made with coffee liqueur, chocolate chips, and surprise surprise, silken tofu. Should be interesting. Another pseudo-healthy pie.
If all works out well, I may bake up another version for Courtney's shindig on January 1st.
PS. I only used 1/3 cup of the Kahlua coffee liqueur for the pie, and I have almost a whole bottle left. I don't really drink alcohol though; not by myself anyway (the fiance doesn't drink either). Anyone in the San Francisco area wanna drop by to help me finish this off? :)
