Nom Diary 6/29

by Nicole Lee

Another long day equals another short blog post.

Breakfast
Three scrambled eggs with a dollop of salsa.

Lunch
Combined some Supergreens along with a can of sardines in olive oil, one avocado, and a squeeze of one lime. Also added a bit of salt and pepper.

Sardines and avocado with “supergreens”

As much as I like the fancy “supergreens,” I think I prefer them cooked than raw. Next time I’ll just use lettuce or other mixed greens for the salad.

Dinner
I’m really relying on Nom Nom Paleo for a lot of recipes lately (she has a neat iPad app!). It’s where I got the idea for the garbage stir fries, as well as this food journal. I had some ground beef and a bag of kelp noodles in the fridge, so I made her awesome recipe for Stir Fried Kelp Noodles after a brief stop at Trader Joe’s for the veggies.

Stir fried kelp noodles

I was skeptical about how the noodles would turn out, but they were actually nice and soft after five or so minutes. Even Brandon, who has been wary of my diet, slurped them up. I would compare them to the glass noodles in pancit, if you’ve had that. Yum.
