Nom Diary 6/28

by Nicole Lee

Today’s meal consisted mostly of yesterday’s leftovers, so this will be a short post. Also, I’m tired and am about to hit the sack.

Breakfast
Scrambled eggs with spinach. I should note that I try to get pastured eggs — I get a dozen pastured eggs every month from Marin Sun Farms. That means the chickens are allowed to choose their diet from the pasture and supplemental grain and are not primarily grain-fed, which is the diet of most factory chickens (Yes, chickens are not vegetarian. They’re supposed to eat bugs and worms! Whenever you see farms advertising that their chickens are “vegetarian-fed” that means they’re not raised on a pasture). Other egg brands that I know are pasture-raised are the rainbow eggs from Red Hill Farms and Eatwell Farms in the Bay Area (I’m sure there are a lot more). Still, sometimes this isn’t possible, and I’ll eat the regular conventional eggs for the protein fix. But whenever I can, I try to get the good stuff. It tastes better too!

I also had a cup of coffee with a splash of the Aroy-D coconut milk. I’m surprised that it actually went together quite well.

Lunch
Yesterday’s leftover stir fry. Yeah, no surprise there.

Dinner
Essentially more of the leftover stir fry, but I supplemented it with a sweet potato that I nuked in the microwave.

After days of not eating that much starch, even a tiny bit of the sweet potato had me stuffed. I should definitely exercise more.
